Shawn Niles—known across kitchens, fire pits, and fine dining rooms as The Fat Pastor—is a private chef based in Yakima, Washington, whose culinary journey has taken him from the pressure of MasterChef to international acclaim. After Gordon Ramsay famously told him he was “born to cook,” Shawn set out to do just that - learning and cooking throughout Italy, Spain, and Portugal, including learning directly from the legendary Chef Massimo Bottura in Modena. His food style is best described as Global Comfort Food with a refined Pacific Northwest Italian twist—rich in soul, rooted in the land, and usually centered around fire and flavor.
In Yakima Valley Wine Country, Shawn is a culinary pioneer. He’s the founder of Bite Club, the nation’s first legal underground dining club, with a loyal membership of over 250 adventurous diners. He’s also the creator of Urban Kitchen, a free culinary and business school for underserved youth, which has become a launching pad for the next generation of food leaders. His talents have earned him multiple “Best Chef” honors, and his open-fire mastery made history when he became the first competitor to ever score a perfect 100 in the Live Fire Division of the World Food Championships.
Whether curating winemaker dinners, feeding celebrities and political figures, or filming his upcoming shows Wine Country Kitchen and Urban Kitchen, Shawn brings joy, excellence, and a deep sense of purpose to everything he cooks. His favorite kitchen companion is his son, Asher—MasterChef Junior finalist and fellow culinary phenom—proving that in the Niles household, flavor is legacy, and fire runs in the family.

He believes in using seasonal, local ingredients to create meals
that are succinct & sophisticated.

Jhonny Reyes is the chef and owner of Lenox, an Afro Latin soul restaurant in Seattle. Born in Harlem and raised in Seattle, Jhonny draws inspiration from his Puerto Rican and Cuban roots, New York upbringing, and West Coast surroundings. He started Lenox as a meal delivery service during the pandemic, which grew into a pop-up and eventually opened as a brick-and-mortar in 2024. A father and community builder, Jhonny is passionate about honoring heritage while pushing flavor forward.
At Lenox, the food tells a story. Rooted in Jhonny’s Puerto Rican and Cuban background, shaped by Harlem, and grounded in Seattle. We serve Afro Latin soul food: vibrant, soulful plates that honor tradition while making space for something new.

Chef Karuna Long is the proud son of Cambodian refugees. Sophon, named for his mother, features authentic to his family cuisine of the Khmer culture and Khmer-diaspora recipes influenced by the many places across the US where Karuna and his family have lived since fleeing their native land.

The Radiant Table is located at 565 Bellevue Way NE. We are located on the NE corner of Bellevue Square, on the Second Level, between Nordstrom and Crate & Barrel.

Each dinner experience is about 2 hours. The welcome lounge opens 45 minutes prior to dinner for a photo opportunity, welcome drink, and a chance to relax before the meal starts.

Your reservation includes a welcome beverage, a 4-course meal and a projection mapped experience.

We will clearly list any allergens in each menu. We offer a meat/seafood option or a vegetarian option only. If you have any additional questions regarding dietary needs, please reach out to us and we will see if we can accommodate.

Reservations for The Radiant Table are communal as it is a shared experience. Each of our tables comfortably seats 8 guests.

We always recommend a group wishing to sit together, should book under one reservation. However, if you know a friend that has booked separately, please email us at events@seproductions.us and we will do our best to accommodate your request.

We ask that you dress to impress! We do offer a complimentary coat check upon arrival.

All guests can park for free at any of The Bellevue Collection garages. The closest garages include NE Bellevue Square parking garage and the Lincoln Square North parking garage.

As the table serves as the canvas for the evening we recommend you do not place any personal items on the table.
You are welcome to use your phone throughout the evening and capture the experience.

Most evenings will welcome all ages. We may offer specific experiences that are 21+ only but they will be clearly listed as such.
Please note that regardless of age, each guest in attendance must have a paid reservation and that we do not offer a separate children’s menu.
